Bacon, avocado, and arugula…dreamy, no? Much like everyone on this planet, I am a deep lover of avocado toast. Unlike everyone on this planet, I am not obsessed with bacon. That being said, I do enjoy back bacon from time to time – salty warm meat, perfectly chewy and oh so flavourful. Hence, the avocado toast with back bacon and arugula was born.
One of my darling friends introduced me to this recipe, combining avocado toast and back bacon not too long ago. Perfect for breakfast or lunch, this little number is packed with flavor, protein, and beautiful colours. And…per my usual recipes, its dead easy. My kinda meal!
Here’s what you’ll need:
- ½ Avocado
- Chilly Flakes
- 1 Slice of Bread
- 1 Slice of Back Bacon
I am a big believer in eating as much preservative free food as possible, so I use Ezekiel bread by Food for Life. I also use organic products when I can, so my avocado and arugula is organic.
Start by cooking your back bacon in a frying pan on medium heat. 2-3 minutes per side should be plenty. Don’t worry about adding any oil to the pan, the bacon will keep everything nice and juicy.
Next, toast your bread to your desired level of toastiness (…is that even a word?). While the bread toasts, I sliced up my avocado and made a little rose out of it (super easy!). To make the rose, slice ½ an avocado into thin strips and then mold it into the shape of a rose – basically just spread out the pieces in a circular formation.
Once your bread is toasted and your meat is cooked, you can begin stacking. I started with the bacon, added a good amount of arugula (oh that peppery goodness!), then the avocado rose, and topped with chilly pepper flakes for a dash of spice.
This has to be one of my favourite avocado pairings of the moment. Its warm, packed full of flavour, and something new. All hail the avocado toast with bacon and arugula! What are your thoughts?
