A few weeks back my mum and I went to the Rosseau Friday Market and picked up a bunch of fresh produce for the weekend ahead. Please let me tell you about the peaches we found – SO juicy! I am a huge fan of peaches, so the minute peach season rolled around, I needed to do something magical with them – hence, the watermelon peach popsicles!
I promise these little popsies are just as delicious as they are cute. They’re tangy, sweet, and totally refreshing! If you’re a sucker for popsicles like me, (pun intended) you won’t be disappointed.
Here’s what you’ll need:
- 1 1/2 watermelon
- 3 peaches
- 1 whole lemon
- a few mint leaves
- popsicle sticks
- popsicle molds
Start by cutting up all of your watermelon and pulling out any seeds. Save the rind. Next, skin your peaches and add the flesh to the chopped up watermelon. Blend until liquified.
Squeeze the lemon to get the juices flowing and then juice the entire thing into the blender.
Once all three of your fruits are blended to a smooth texture, tear up your mint leaves and drop them into your mixture as your pseudo seeds.
Pull out the watermelon rind that you put aside earlier on and cut out pieces that will fit the top of your popsicle molds. Create a slit in the middle of the rind that your popsicle stick can poke through 2/3 of the way.
Pour the mixture into your molds leaving about about 3/4 of an inch at the top.
Once you’ve put your rind and popsicle stick in the mold, stick those babies in the freezer and wait patiently.
Service nice and cold on a piping hot day. Enjoy my friends!
